Signe’s pancakes

My friend Signe “the pancake queen” Marie’s recipe for crêpe style pancakes 🥞

  • 4whole
    Eggs
  • 7dl
    Milk
  • 5dl
    All purpose flour
  • 16cl
    Beer
  • 0.5tsp
    Lemon juice
  • 1tbsp
    Sugar
  • POWDERED CARDAMOM
  • Vanilla sugar (can be substituted with vanilla extract)
  • SALT

Instructions

    Whisk eggs, beer, lemon juice and half of the milk together.

    Mix the dry ingredients in a separate bowl.
  3. 3
    Alternate between adding the dry mix and the rest of the milk to the wet batter. Mix until the batter is smooth.

    Heat up a medium size pan. When it is hot, add a scoop of butter.

    When the butter has melted, add a cup of batter and tip the pan back and forth to distribute it evenly.

    Once the edges are browned and there is no more liquid batter on the pan, use a spatula to flip the pancake and bake it on the other side.

    Repeat step 5 and 6 until you are out of batter. Serve with sugar and lemon wedges.
