Maple Pear Curd

Ingredients

  • 4
    pears, peeled and cored
  • 1/4cup
    maple syrup
  • 4
    egg yolks
  • 1/4tsp
    cornstarch
  • 1tbsp
    water
  • 1/4cup
    cold cubed unsalted butter
  • 1/2tsp
    kosher salt

Instructions

    Blend the pears until they are smooth, then pour them into a medium-sized sauce pot. Add the maple syrup and bring the mixture to a boil for about a minute, stirring occasionally.

    In a separate bowl, whisk the yolks until they are broken up.

    Temper the pear sauce into the yolks by adding a little bit of hot liquid into them (stirring constantly!) until all of the hot liquid has been added. Once finished, return all to the pot and cook over low heat, stirring frequently until it is thickened, about 5 minutes.

    Stir together the cornstarch and water and add it to the pear mixture. Bring the pot back to a simmer and let it cook for another 3-4 minutes (stirring frequently).

    Remove from the heat, whisk in the butter and salt and let the curd chill until you're ready to use it.
