  • 1Package
    Puff pastry
  • 2cup
    Yellow onion sautéed in butter
  • 1Tbsp
    Garlic
  • 210 ounce packages
    Spinach
  • 1/3cup
    Scallions
  • 1cup
    Grated Gruyère cheese
  • 3/4cup
    Grated Parmesan cheese
  • 4Large
    Eggs
  • 1Tbsp
    Dry breadcrumbs
  • 2Tsp
    Salt
  • 1Tsp
    Pepper
  • 1/2Tsp
    Ground nutmeg
  • 1/4cup
    Roasted pine nuts

Instructions

    Sauté onions in a little butter then add 1 tablespoon garlic.

    Defrost spinach and squeeze out most of the water. Combine with onions
  3. 3
    Add scallions, grated cheese, eggs, breadcrumbs, salt pepper and nutmeg
  4. 4
    Lightly roast pine cuts and add to spinach mixture
  5. 5
    Put down first piece of puff pastry and add spinach mixture leaving a border around the edges

    Roll out second piece of puff pastry about an extra inch all the way around.

    Put on top of spinach mixture and crimp around the edges

    Brush pastry with and egg wash and cut 3 slits in the top to release the steam. Cook at 375 degrees for 35 minutes or until golden brown
