Ingredients

- 1PackagePuff pastry
- 2cupYellow onion sautéed in butter
- 1TbspGarlic
- 210 ounce packagesSpinach
- 1/3cupScallions
- 1cupGrated Gruyère cheese
- 3/4cupGrated Parmesan cheese
- 4LargeEggs
- 1TbspDry breadcrumbs
- 2TspSalt
- 1TspPepper
- 1/2TspGround nutmeg
- 1/4cupRoasted pine nuts
Instructions
- 1Sauté onions in a little butter then add 1 tablespoon garlic.
- 2Defrost spinach and squeeze out most of the water. Combine with onions
- 3Add scallions, grated cheese, eggs, breadcrumbs, salt pepper and nutmeg
- 4Lightly roast pine cuts and add to spinach mixture
- 5Put down first piece of puff pastry and add spinach mixture leaving a border around the edges
- 6Roll out second piece of puff pastry about an extra inch all the way around.
- 7Put on top of spinach mixture and crimp around the edges
- 8Brush pastry with and egg wash and cut 3 slits in the top to release the steam. Cook at 375 degrees for 35 minutes or until golden brown
