Fish Pie
The first time I made this my Scottish grandmother was visiting Houston for New Years and she said she hadn’t had fish pie since her mother died when she was 20.

Ingredients

- 2Leeks
- 3Cloves garlic
- 10Fingerling potatoes
- 1/2Bag frozen peas
- 4TbspButter
- 3TbspFlour
- 1cupMilk
- 1Puff pastry sheet
- 1Filet cod
- 1Filet salmon
- 1cupGrated Parmesan or other cheese
Instructions
- 1Clean, cut and boil tomatoes in salted water until fork-able.
- 2Cut leeks and mince garlic. Brown in olive oil with salt and pepper. Option to use cast iron pan which can also function as your baking dish. Add frozen peas and turn off heat when softened.
- 3Melt butter in a saucepan over medium heat. Once melted add flour and whisk to combine. Once thickened add milk and cheese. Keep whisking to combine. Take off heat.
- 4Remove skin from fish filets and cut into chunks. Add fish to baking dish along with potatoes, vegetable mixture and roux gently stirring to combine. Top dish with a sheet of puff pastry.
- 5Bake at 425 for 35-45 minutes. Allow to cool slightly before serving. Nice with leafy salad.
